Spring into Flavor with Lemony Salmon and Roasted Asparagus

This recipe is not only delicious but also incredibly easy to make. It's perfect for a weeknight meal or a casual weekend lunch. Plus, it's packed with nutrients: lean protein from the salmon, vitamins and fiber from the asparagus, and a healthy dose of vitamin C from the lemon.

Ingredients:

  • 2 salmon fillets (around 6 oz each)
  • 1 bunch asparagus, trimmed
  • 1 tablespoon olive oil
  • 1 lemon, juiced (and zest for garnish, optional)
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried thyme
  • Salt and freshly ground black pepper, to taste

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, whisk together olive oil, lemon juice, garlic, thyme, salt, and pepper.
  3. Place the salmon fillets on the prepared baking sheet. Spoon half of the marinade over the salmon, reserving the rest for later.
  4. Toss the asparagus with the remaining marinade and spread them out on the baking sheet around the salmon.
  5. Bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork, and the asparagus is tender-crisp.
  6. To serve, spoon the pan juices over the salmon and asparagus. Garnish with lemon zest, if desired.

Tips:

  • Don't overcook the salmon! It will dry out quickly. Aim for an internal temperature of 145°F (63°C).
  • For a vegetarian option, substitute tofu or tempeh for the salmon.
  • Want to add some extra flavor? Try adding a pinch of red pepper flakes to the marinade.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
